What is truffles and what markets can I get them?

Chocolate truffles are a chocolate ganache rolled in different toppings, Cocoa is classic. Any upscale market or candy shop will have them.

As far as recipies, there are a million online. Ganache is easy and sooo good.

The fungi truffle is a little tougher. It is a fungus that grows wild throughout Europe and is cultivated in the US Namely Oregon.

There are White and Black Truffles. The white is milder and more subtle. I have found fresh truffles in Whole Foods and Jar'd truffles in my local gourmet shop. Classic recipes are truffle risoto, or mashed potatoes. I love them on scrambled eggs!!! You may want to try truffle oil to start with. It is available everywhere.

Easy Decadent Truffles

Insanely easy, but oh so rich!

Recipe makes a large amount but you can vary flavorings and coatings to make several different varieties.

1 (8 ounce) package cream cheese, softened

3 cups confectioners' sugar, sifted

3 cups semisweet chocolate chips, melted

1 1/2 teaspoons vanilla

In a large bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls.

Roll truffles in ground walnuts (or any ground nuts),

cocoa,

coconut,

confectioners' sugar,

candy sprinkles, etc.

To flavor truffles with liqueurs or other flavorings, omit vanilla.

Divide truffle mixture into thirds.

Add 1 tablespoon liqueur

(almond,

coffee

orange)

to each mixture;

mix well.
