3 bell peppers
3 stalks celery
1 bunch green onions
Cut peppers in rings, slice onions and celery into bite sized pieces, I like to cut at an angle.
Take chicken breasts, take off skin, cut in bit sized pieces, marinate in oil, I like sesame oil, but peanut, or canola work, along with soy sauce, crushed garlic, and salt to taste, for 20 minutes.
Put 1 T cornstarch, 1/4 tsp sugar, I T soy sauce, in 1/4 cup water mix thoroughly.
Cook vegetables 3 minutes in 2 T oil
Peanut is best, but if you are allergic use canola.
Fry chicken 3 minutes
Add vegetables and cornstarch mix
Cook 2 more minutes
Use as many vegetables and chicken as needed to feed number of people being served
You can also add snow peas, cashews, water chestnuts, or asparagus.
To stir fry asparagus, blanch about one minute in boiling water, take out put in cold water. Stir fry asparagus is really good, just cook until crunchy not soft, good with stir fry sauce.
Stir fry beef with asparagus is also good.
None of these dishes take more than 20 minutes, and most of that is spent cutting up the items.
