Jicama gone bad? So I had a Jicama on my counter and noticed a tiny bit of mold on the outside. I thought, crap... I better at least cut the rest of it up and stick it in the fridge. Cut into it, cut out the obviously bad part but the rest of it is a little brown spotted throughout.. Still good? Bad? The care and feeding of Jicama is not quite my forte just yet. :)

I don't know about those brown spots either.

When I find them, I just figure it's a sign of something I don't want to ingest and thow it out/start over.

Also, and maybe this affects something, I usually keep it in the fridge. I forget what started me doing that.

I know that once jicama's cut, it goes

slimy pretty fast. Not when you're using it the first time, mind you, but if you don't use up the rest within a day or two (kept in the refrigerator) it gets yucky/slimy.

I was able to keep mine fresh for a couple of weeks by Food Savering it, cut into slices, with some paper towel above and below it in the jar.

Brown spots? I'd toss it. It's not an expensive ingredient.
